Rhubarb Oatmeal Squares
These squares were a crowd favourite at the Flower Show Tea.
Here is the recipe, by popular request, from Roberta Marshall.
Ingredients:
2 c flour | Filling: |
2 c quick oats | 2 c rhubarb cut small |
1.5 c br. Sugar | 1 c white sugar |
1 c butter slightly melted | .25 c water |
1 tsp vanilla | 2 T cornstarch |
Pinch of salt | 3 T strawberry jam |
Instructions:
- Mix crust ingredients till crumbly, keep 1 c mix for topping
- Cook till rhubarb soft
- Add 2 tbsp cornstarch & 3 tbsp strawberry jam
- Put crumb mixture in 9 X 13 pan, when rhubarb is cool spread over bottom crust.
- Top with 1 c of crumb mix.
Bake at 350°F for 30 to 35 min until golden
These squares are delicious!!
