Chocolate Zucchini Bread
Here is a recipe to help you use all the extra zucchini in your garden.
Ingredients:
1/2 cup white sugar | 2 cups flour |
1/2 cup brown sugar | 1 tsp baking soda |
3 large eggs | 1 tsp baking powder |
1 cup oil | 1 tsp salt |
1/2 cup chopped nuts | 3 tsp cinnamon |
2 cups grated zucchini | 3 tsp vanilla |
1/2 cup raisins | |
1 Tbsp cocoa |
Instructions:
Sift dry ingredients. Set aside. In large bowl beat eggs, sugars, oil and vanilla. Stir wet ingredients into dry. Fold in zucchini, nuts, and raisins. Pour batter into two greased 8 1/2 ” x 4 1/2″ loaf pans.
Bake at 325 F for 60 to 70 minutes.
